I can’t tell you how excited I am to have a Yeme

I can’t tell you how excited I am to have a Yemeni coffee shop in my neck of the woods! The coffee plus snacks are always a treat, and I was surprised to see how HUGE this location is. Perfect for group hangouts. Qahwah House in Westbury (LI) grand opening November 8!

🔸Tandoori Chicken Biryani🔸 Chicken marinade

🔸Tandoori Chicken Biryani🔸

Chicken marinade:
10 pcs chicken legs and thighs
1.5 tbsp ginger paste
1 tbsp garlic paste
Spices:
1 tsp salt (adjust)
1 tsp coriander powder
1 tsp cumin powder
1 tsp red chili powder (adjust)
1/2 tsp garam masala
1/2 cup yogurt
3 tbsp tandoori paste
Juice of 1/2 a lemon

👉Marinate chicken with all the ingredients above.
👉In a pot, heat 1/4 cup oil + 1 tbsp ghee and sauté 2 cups thinly sliced onions until golden.
👉Add chicken, mix well, and sauté uncovered for 10 minutes on medium heat, stirring frequently. When the chicken starts to look opaque, cover and let cook. Liquid will release from the chicken, then start to get absorbed back in.
👉When the chicken is cooked through and the liquid has reduced to a thick gravy, add 1 tbsp ghee, 1 tsp kewra, and a pinch of kasuri methi.

Rice:
👉While you’re cooking the chicken, soak 3 cups basmati rice for 30 mins, then wash and drain.
👉Bring a large pot of water to boil and add:
2 bay leaves
4 cardamom pods
10-12 whole black peppers
2 cloves
2 medium sticks cinnamon
1/2 tsp cumin seeds
1 tbsp oil
1.5 tbsp salt (adjust)
👉Add the soaked rice and bring it back to a boil. Let it boil for 5 minutes. The rice should be about 75% cooked at this point. Test this by pressing a grain of rice between your fingers; it should easily split into two.
👉Drain the rice in a strainer. Add 1 tbsp ghee and gently toss with the rice.

👉Prep fried onions for layering. Fry 2 cups sliced onions in 1/4 cup oil + 1 tbsp ghee. Also prep chopped cilantro and green chilies.

👉Remove 1/3 of the chicken from the pot. In the same pot, layer the components like this: chicken, rice, fried onions, cilantro, green chilies. Repeat 2 more times.
👉Cover with foil, place lid, and steam in the oven at 350 for about 20 minutes.
👉Gently stir to fluff up the biryani. Enjoy hot!

Idk about you but sometimes I just NEED that Bengali curry fix. But when I’m feeling lazy or I’m pressed for time, I make this easy sheet pan Bengali chicken that gives me all the same flavors, minus the effort. Some daal on the side and a squeeze of lemon, and my craving is satisfied 😌

🔸OVEN BAKED BENGALI CHICKEN 🔸

•About 20 pcs chicken legs and thighs, skinless
•1 tbsp ginger paste
•1 tbsp garlic paste
•1.5 tsp salt (adjust)
•1 tsp turmeric
•1 tsp red chili powder (adjust)
•1 tsp coriander
•1 tsp cumin
•1/2 tsp garam masala
•2 tbsp yogurt
•1/4 cup cooking oil

👉 Wash and drain chicken.
👉 Make a marinade with all the ingredients listed above. Pour over the chicken, mix well, and let marinate for as long as time allows.
👉 Transfer the chicken onto a lined sheet pan (spray with oil first). Spread the chicken out so there’s no overlap.
👉 Bake at 400 degrees for 35 to 40 minutes, basting halfway.
👉 Broil for 2-3 minutes, then remove from oven.
👉 Baste again while the chicken is still hot. Garnish with chopped cilantro.

Enjoy with rice, daal, and a squeeze of lemon 🙂
