Shrimp Hakka Noodles

Stir fried noodles, shrimp & vegetables using Desi Chinese flavors

Ingredients
  

Shrimp:

  • 1 lb. shrimp tails on
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp soy sauce
  • 1/2 tsp chili garlic sauce

Noodles:

  • 1 package veg hakka noodles (I use Ching's Secret brand) 600 grams
  • 1/4 cup oil
  • 1 cup thickly sliced onions
  • 6 cloves garlic, minced
  • 1 tbsp julienned ginger
  • 1 cup carrots cut into matchsticks
  • 2 cups sliced cabbage
  • 1/2 of a green bell pepper, thinly sliced
  • 1/2 of an orange bell pepper, thinly sliced
  • 3/4 tsp salt divided
  • 3/4 tsp black pepper divided
  • 3 tbsp soy sauce
  • 3 tbsp vinegar
  • 2 tbsp chili garlic sauce
  • scallions for garnish

Instructions
 

Shrimp:

  • Marinate shrimp with all the ingredients listed under "Shrimp" and let sit while you chop the vegetables and boil the noodles.

Noodles:

  • Boil noodles according to package directions. Drain, rinse with cold water, and toss with a little oil to prevent sticking.
  • In a wok or wide frying pan, heat the oil and add onions, garlic, and ginger. Sauté for 3-4 minutes.
  • Add carrots, cabbage, green bell pepper, and orange bell pepper, followed by 1/4 tsp salt and 1/4 tsp black pepper. Stir fry for 3-4 minutes.
  • Add the marinated shrimp and stir fry until the shrimp turns pink.
  • Add the noodles, followed by 1/2 tsp salt, 1/2 tsp black pepper, soy sauce, vinegar, and chili garlic sauce. Stir fry for 5-7 minutes. Adjust seasonings.
  • Garnish with chopped scallions and enjoy hot.

Originating from Chinese migrants in Kolkata, India, the flavors of Chinese cooking married the spice-rich palate of South Asian cooking to create the most phenomenal fusion!

This dish can be made the same way using chicken or beef instead. Or if you want, you can leave it as simply a vegetable hakka dish.     I made this for my kids and they absolutely loved it. I made it veggie only this time. My 3 year old took it to school for lunch and he came back with an empty thermos! I’ll be making this regularly, thank you!

    I made this for my 3 year old son who loves hibachi noodles. I made sans shrimp, only veggies and he loved it. I sent leftovers for lunch the next day and he came back with an empty thermos. (I also had it for lunch and it was delicious!) Thank you!
